PLEASE NOTE: THIS CLASS TAKES PLACE AT HQ (FORMERLY MARTIN MACK’S), AN IRISH PUB LOCATED AT 1568 HAIGHT STREET IN THE UPPER HAIGHT NEIGHBORHOOD. ONCE YOU ARRIVE AT HQ, WALK THROUGH THE MAIN BAR TO THE BACK BAR. THE CLASS WILL TAKE PLACE IN THE BACK BAR.

Over the last decade the phenomenon that is TIKI has slowly but surely wiggled its way back into the hearts and minds of both bartenders and cocktail enthusiasts alike! And SF is no exception. With bars including Trader Sam’s, Tonga Room, Smuggler’s Cove, Pagan Idol, and Trader Vic’s... the Bay Area is teeming with TIKI!! But whether its a new hot spot downtown, or a bamboo dive that’s decades old, these bars all share that common purpose of giving you one hell of a fun, boozy time!

So, to celebrate this glorious tiki resurgence, SF bartender extraordinaire Gillian Fitzgerald will take you through some of the history of tiki cocktails, the culture that surrounds them, and the booze that makes them just so damn tasty! You’ll learn to shake, muddle and stir using proper bar tools and techniques as Gillian guides you through the preparation of three classic and newly minted tiki cocktails. Each student will take home a handout that includes a tiki recipe list, a guide to the best tiki in the Bay, and helpful suggestions for stocking your home bar to re-create cocktails on the tiki circuit. The price of this class includes one drink ticket, good for a cocktail or beer of your choice at HQ (since the three you make during the class surely won’t be enough...)

Supplies Needed: None. But if show up in proper tiki attire, we may have an extra drink ticket for you. Flower leis, tropical prints, hula skirts, coconut bra...

Instructor Bio: Gillian Fitzgerald has filled both the role of bar owner and cocktail maven. She grew up just outside of Dublin in Ireland before moving to San Francisco in 2008. Having spent many a night behind the bar concocting marvels of libation goodness, Gillian opened Virgil’s Sea Room in the Mission in July 2013. In late 2015, she and business partner Kelly McVicker of McVicker Pickles launched their own line of bloody mary mix, aptly named Proud Mary. Check out Proud Mary at http://www.drinkproud.com. She can be found behind the stick as Bar Manager for the newly opened Finn Town Tavern.
